Grilled Lemon Herb Pork Chops
Servings: 6
Prep Time: 20 min
Ingredients
1⁄4 cup lemon juice |
2 tbsp olive oil |
4 clove garlic, minced |
1 tsp sea or kosher salt |
1⁄4 tsp black pepper, freshly ground |
1⁄4 tsp dried oregano |
6 (4 oz each) pork loin chop |
1. In a large resealable bag, combine lemon juice, olive oil, garlic, salt, black pepper, and oregano. Place pork chops in the bag, seal, and refrigerate for 2 hours or overnight. Turn the bag frequently to distribute the marinade.
2. Preheat an outdoor grill for high heat. Remove pork chops from the bag and transfer remaining marinade to a saucepan. Bring the marinade to a boil, remove from heat, and set aside.
3. Lightly oil the grill grate. Grill pork chops for 5 to 7 minutes per side, basting frequently with boiled marinade, until the meat is no longer pink inside. A meat thermometer inserted into the thickest part of a chop should read at least 145 degrees F (63 degrees C).
