Braised Pork Sweet Potato Hash
Prep Time: 25 minutes
3.68 kilograms pork leg (Mojito)
2.76 kilograms sweet potatoes (blanched and diced)
417 grams yellow onion (diced)
231 grams black pepper (ground)
253 milliliters olive oil
1. In sauté pan, heat oil, sweet potatoes, pork, and onions.
2. Heat until temperature reaches 165F, finish with black pepper and hold hot.
