Cajun Eggs Benedict with Blackened Grilled Ham Steak

Ingredients

3 Tbsp. paprika (mild)

3 Tbsp. dried Italian seasoning

1 Tbsp. cayenne pepper (or to taste)

1 Tbsp. ground black pepper

1 1/2 tsp. dry mustard

3/4 tsp. celery seed

2 bone-in ham steaks (2 pounds total, or boneless)

4 English muffins (split and buttered)

8 Tbsp. peach preserves (optional)

4 poached eggs (or eggs cooked to preference)

1 cup hollandaise sauce

paprika (for garnish, optional)

chopped parsley (for garnish, optional)

1. Preheat grill to medium-high heat.

2. Combine all spices in bowl; rub generously over both sides of ham steaks.

3. Grill steaks, covered, 3 to 4 minutes on each side. Grill muffins, buttered side down. Continue to cook ham until heated through and lightly blackened, and muffins are golden; remove from grill.

4. Cut ham into pieces.

5. To assemble, spread each grilled muffin half with a tablespoon of peach preserves if using. Top each muffin half with two pieces of ham, followed by poached egg. Spoon Hollandaise sauce over eggs. If desired, garnish with paprika and parsley. Serve immediately.
