Cast Iron Whole Hog Hash

Ingredients

1/2 pound bacon (diced)

1 pound fingerling potatoes (quartered)

1/2 pound smoked ham (diced)

1/2 pound smoked sausage (diced)

1 large yellow onion (peeled, cored, diced)

4 jalapeño chiles (stemmed, cored, chopped)

8 eggs (cracked)

cracked pepper (to season)

1. In a large cast iron skillet of medium heat, cook the bacon until lightly browned.

2. Add the potatoes, ham, sausage, onions and chiles to the skillet and fry until lightly browned.

3. When the potatoes are tender, crack the eggs evenly over the mixture and cook until sunny-side-up. Season with pepper and serve.

4. **Another variation can be to grilling the sausage and ham prior to adding them to the dish.
