Sweet and sour pork ribs in a spicy ginger marinade

Ingredients

American pork spareribs 350 g

Broth 120 ml

MARINADE:

dry chili pepper (flakes) 7 g

black pepper 3 g

salt 7 g

fresh ginger 10 g

garlic 10 g

lemon peel (1 lemon)

peel and pulp of mandarin

white wine 500 g

liquid honey 10 g

soy sauce 30 g

rice vinegar 7 g

lemon juice 7 g

SPICES:

scallions 15 g

sichuan pepper 5 g

star anise 2 g

cinnamon 2 g

1. Split spareribs into portions of 2 ribs each.

2. Prepare ingredients for marinade and mix them thoroughly in a deep baking container. Place ribs in marinade and coat them in the marinade from all sides. Cover with food plastic wrap and marinate in refrigerator for 7-9 hours at + 3-5°С.

3. Heat the deep pan, remove ribs from the marinade and fry in oil on both sides. Place ribs in a roasting container and season with spices and pour the stock into pan. Cover with aluminum foil and roast in the oven for 1 hour at 180°C.

4. Remove the foil, pour the ribs over the top with gravy and roast until the liquid evaporates .
