Namtok Pork

2 pounds pork secreto

2 tablespoons lemon grass (thinly sliced)

1 tablespoon black pepper (cracked)

1 tablespoon soy sauce

3 lime

3 tablespoons fish sauce

2 teaspoons sugar

1 tablespoon Thai roasted chili powder

1/2 cup thai basil

1/2 cup cilantro

1/2 cup mint

1/4 cup green onions

1/2 cup shallots (sliced thin)

3 tablespoons roasted rice powder (Thai or jasmine rice**)

1. Mix the lemongrass with the pepper and soy sauce and spread evenly over pork and let marinate for 1 hour.

2. Grill pork to medium rare, medium and let rest.

3. Mix lime juice, fish sauce, sugar, Thai chili powder together to form dressing.

4. Mix basil, cilantro, mint, green onion, and shallots together and combine with “dressing”.

5. Put salad on top of pork and pour liquid over pork. Garnish with rice powder.
