American Ground Pork Meatloaf

Ingredients

2 lb. ground pork

2 large eggs

1/2 cup skim milk

2 Tbsp. dijon-style mustard (grainy or non-grainy, depending on preference)

2 Tbsp. Worcestershire sauce

1 tsp. kosher salt

1/2 tsp. black pepper (freshly ground)

3/4 cup breadcrumbs

1/4 cup Italian parsley (chopped, OR 2 tablespoons dried parsley)

1/2 cup ketchup

2 Tbsp. brown sugar

1 tsp. yellow mustard

green beans (to serve)

mashed potatoes (to serve)

Cooking:

1. Heat the oven to 400°F. Line a baking pan with a few layers of aluminum foil and set aside.

2. In a large bowl, add the eggs, milk, mustard, 1 Tbsp. Worcestershire, salt, and pepper. Whisk until everything is evenly combined. Add the ground pork, breadcrumbs, and parsley. Mix until combined.

3. Transfer the meat to the prepared baking sheet and form it into a 9- by 5-inch loaf. Bake for 40 minutes.

4. In a separate bowl mix ketchup, brown sugar, 1 Tbsp. Worcestershire sauce and yellow mustard. Coat the meatloaf with the sauce and return to oven to bake for an additional 20 minutes or until it reaches an internal temperature of 160°F.

5. Remove from the oven to a cutting board and let cool for 10 to 15 minutes before slicing and serving.
